Celebrated Spirits: Sunday Royale Spritz

General Manager Cameron Wilson wanted something “light, refreshing, a little pink … like you’re sitting on the porch on a Sunday kind of day” with this Tom Collins riff. After sampling the Blackberry Royale tea from Tin Roof Teas, he turned it into a syrup that’s added to the vodka and lemon before being finished with soda water and a touch of saline to make it “pop.” Garnish the Collins glass with mint for an aromatic greeting with every sip.

2 ounces soda water
2 ounces Wheatley vodka
¾ ounce Blackberry Royale Syrup
1 ounce lemon juice
3 drops saline
mint, for garnish

In a shaker with ice, combine Wheatley vodka, Blackberry Royale Syrup, and lemon juice. Shake and strain over fresh ice. Top with soda water and saline, and garnish with mint.

For Blackberry Royale Syrup: Bring 16 ounces of water to a boil. Add 4 teaspoons (12 grams) of Blackberry Royale Tea and steep for 8 minutes. Strain, add sugar, and mix to combine.
