Beefless Burgers

Sweet Potato Burgers

Recipe by Kim’s Cravings. Yields 6 servings

Ingredients
1 large sweet potato, yielding 1 cup puree
1 15-ounce can garbanzo beans
1 1/2 cups panko bread crumbs
1/2 cup red bell pepper, diced
1/2 cup onion, diced
1/4 cup celery, diced
1 large egg
1 1/2 tablespoons taco seasoning
1/4 teaspoon garlic powder
1/4 teaspoon cayenne pepper

Instructions

  1. Bake, microwave, or boil your sweet potato until tender. Remove/discard potato skin and, using a food processor or blender, puree the sweet potato until smooth but thick. Transfer the sweet potato to a large mixing bowl.
  2. Next, add rinsed garbanzo beans to the food processor. Pulse just a few times to break up the beans, still leaving lots of texture. Add beans to large mixing bowl with sweet potato.
  3. Add bread crumbs to the sweet potato mixture. Then, sauté bell pepper, onion and celery over medium-high heat.
  4. Once your veggies are cooked, add them, along with the egg and seasonings to the bowl with the sweet potato mixture. Stir to incorporate and divide burger mixture into 6 balls.
  5. Cup each ball in your hands and squeeze, pressing it into a round compact patty. Refrigerate patties for about 30 minutes to set.
  6. To cook, spray a large skillet with cooking spray and heat over medium to high heat. Cook for a few minutes on each side until the patty is golden and the center is warm. Cooking times will vary a bit depending on the size of your burgers and type of pan/skillet used, so aim for a crispy outside with a warm tender center.
  7. Once done, pile a lightly toasted bun high with your toppings of choice!

Umami Black Bean Burgers

Makes 4 large patties

Ingredients
2 14-ounce cans black beans, rinsed and drained
1 cup Panko bread crumbs
1/2 cup diced red onion
1 egg
1 tablespoon Worcestershire sauce
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon truffle salt
1/2 teaspoon dried oregano
1/2 teaspoon black pepper
Shredded Gruyere cheese, to taste

Toppings:
Sautéed mushrooms, truffle salt, mayo, caramelized onions

Instructions

  1. Pulse the beans in a food processor until coarsely chopped.
  2. Mix all of the ingredients together in a large bowl until well combined. If the mixture seems too wet, add more bread crumbs.
  3. Form into four patties. Remember, since the black bean patties will not shrink during cooking, size according to the size of your buns!
  4. Cook on the stovetop using a well-oiled grill pan for about 5 minutes on each side, or bake in the oven on a parchment-lined baking sheet at 350 F degrees for about 20 minutes, turning once after 10 minutes.
  5. Sprinkle the cheese on the burger, and melt the cheese on the burger by cooking for a few more minutes.
  6. Serve on a toasted bun with all your favorite burger toppings!
